Tiramisu

Ingredients:
Serves 12
Raw Cream 32oz
Mascarpone cheese 24oz
Organic lady fingers (or make homemade) 2.5 packs (60 total)
Espresso or strongly brewed coffee
Marsala wine or rum or kahlua (optional)
Coconut sugar
Vanilla extract
Monkfruit (optional)
Cacao powder
Dark Chocolate for grating on top (optional)

Tools:
A large 9x13 with high sidewalls dish
Electric mixer
Instructions:
Put the coffee mixture (coffee and optional wine or rum) in a shallow bowl - dip the cookies in horizontally, quickly (don't over soak). Add them to the dish in a single layer.
Combine monk fruit and/or coconut sugar with the raw cream. Use a hand mixer to beat the raw cream til is fluffy but stop before it starts to feel too thick and buttery - mix in the marscapone. (I haven't played around with this part - could perhaps add an egg white to get it lighter? Beat/whisk the mascarpone at the same time? As is, tastes/feels amazing, but would recommend experimenting)
Layer 1/2 the cream mixture on top of the soaked ladyfingers in the dish.
Repeat with another layer of cookies. Add the remaining cream.
User a sifter/strainer to powder the cacao powder on top.
Grate some chocolate on top for looks (doesn't really matter)
Chill overnight or for at least 4 hours!
Notes:
This recipe is expensive (~$50) but extremely decadent, gourmet and gives the WOW factor.
Healthy version (not lowcal, not yet tested)
