Cream of Broccoli Soup (dairy-free)

Ingredients:

  • 1 medium onion, diced

  • 3 leeks thinly sliced using the white parts

  • 2 garlic gloves chopped

  • 2 heads broccoli, diced

  • 1 can full fat coconut milk

  • 3 cups chicken broth

  • 2-3 tbs coconut or avocado oil

  • 1 tbs lemon juice

  • salt and peppa

  • nutritional yeast and/or curry powder (optional)

Instructions:

  1. Sauté onions, leeks and garlic on medium hot in a large pot until soft and translucent

  2. Add broccoli, coconut milk and broth and bring to a boil

  3. Reduce heat and simmer for 20 minutes until florets are soft.

  4. Add lemon juice and use an immersion blender to purée contents of the pot til smooth.

  5. Add salt and peppa to taste. Enjoy!

Optional: Add 1 tbs curry or 1/4 cup nutritional yeast and blend into the soup.
