This recipe was modified from bonappetit.com and can be used on top of basically everything, but was originally intended for tostones (fried plantains).
Ingredients:
1 cup greek yogurt
1/2 bunch cilantro
4 green onions
1/2 habañero (or jalapeño)
2 limes
kosher salt
pinch of cumin rounds it out
Instructions:
Step 1:
Prepare cilantro, green onions, and habañero for the food processor
Step 2:
Squeeze in the juice from the limes + 2 tbs water and season with a big pinch of salt. Blend on medium about 15 seconds. (You want these things finely chopped).
Step 3:
Add the yogurt and blend on high speed until sauce is pale and frothy (about 1 min).
Step 4:
Pour into serving bowl, and chill at least 1 hour before serving (ideally 2).
Garnish recommendations:
- put a lime circle on the edge of the bowl
- add a sprinkle of pumpkin seeds or white sesame seeds in a diagonal line
- add a few slices of green onions
Serve over romanesco, meat, or anything at all 🤤
