Betty's Mung Bean Bonanza

Ingredients:

  • Onion

  • Carrots

  • Mushrooms

  • garlic

  • sesame oil

  • chicken broth

  • mung beans

  • black pepper

  • sambal oelek


Instructions:

  1. Onions + carrots sauteed

  2. Remove onions and set aside

  3. Sautee Mushrooms + garlic

  4. Add chicken broth (whenever pan gets dry, so not adding too much oil)

  5. Add mung beans

  6. Add sambal oelek + soy sauce (if desired)

  7. Add onions back in

  8. Add sesame oil + black pepper



Alternatives:

Play around with the spices

Could also add: Celery, cabbage, broccoli etc. (add alongside onions)


Notes:
