Dreamy Chocolate Pudding

Ingredients:
6 oz almond milk (or alternative milk)
16 oz water
1.5 cups ice cubes
1 tbs xanthan gum
2.5 tbs cacao powder
2 oz decaf espresso (can omit or sub for powdered instant coffee)
Monkfruit Lakanto sugar (aka powdered erithrytol)
1 scoop protein powder (optional)
Cardamom to taste (optional)
Instructions:
Combine all and blend in high-powered blender (ideally vitamix).
Top with Lakanto sugar and cardamom.
Tips:
Play around with the amounts of liquid and ice to create a consistency you like.
